Crunchy Au Gratin Potatoes
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 1 cup half-and-half cream
- 1 cup canned pumpkin
- 1 tablespoon prepared horseradish
- 1/2 teaspoon ground nutmeg
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2-1/4 pounds potatoes, peeled and cut into 1/4-inch slices
- 2 cups soft bread crumbs
- 8 ounces Gruyere or Swiss cheese, shredded
- 2 tablespoons chopped fresh sage
- In a large skillet, cook onions in butter over medium heat for 15-20 minutes or until onions are golden brown, stirring frequently.
