Fruit Salad Mold
- 1 large pkg. lemon Jell-O
- 2 c. boiling water
- 2 c. 7-Up
- 3 large bananas, sliced
- 1 large can crushed pineapple
- 2 c. miniature marshmallows
- 1 c. pineapple juice
- 1/2 c. sugar
- 1 heaping Tbsp. flour
- 1/2 pt. whipping cream
- 1 c. shredded coconut
- 1 c. chopped walnuts
- Dissolve Jell-O in boiling water.
- Add 7-Up and bananas.
- Drain pineapple and save juice.
- Add pineapple and marshmallows to Jell-O.
- Pour into 13 x 9 x 2-inch pan and chill until firm.
- Cook pineapple juice, sugar and flour until thick.
- Cool thoroughly. Whip whipping cream until firm and fold pineapple juice mixture into whipped cream.
- Spread onto firm Jell-O.
- Sprinkle with coconut and nuts.
- Refrigerate.
- Serve when cool.
