Delicious And Nutritious Cake
- 1 1/2 c. oatmeal
- 2 c. boiling water
- 1 c. sugar
- 1/2 c. packed brown sugar
- 2/3 c. vegetable oil
- 3 eggs
- 2 grated carrots
- 2 c. sifted all-purpose flour
- 1 1/2 tsp. baking soda
- 2 tsp. salt
- 2 tsp. cinnamon
- 1 c. chopped nuts
- 1 pkg. coconut pecan frosting mix
- Preheat oven to 325u0b0.
- Grease a 13 x 9 1/2 x 2-inch pan.
- Put oats and boiling water in a bowl; let stand.
- Combine sugars, oil and eggs well.
- Stir in oatmeal; mix well.
- Sift flour, soda, salt and cinnamon together; add to oatmeal mixture.
- Stir in nuts. Spread in prepared pan.
- Bake for 50 to 60 minutes, or until done. Remove from pan.
- Immediately spread prepared frosting onto the cake.
