Speedy Strawberry Smoothies

  1. In a 5 cup blender container, sprinkle gelatin over cold water. Let stand 3 to 4 minutes.
  2. Add boiling water and blend at low speed until gelatin is completely dissolved, about 2 minutes.
  3. Add 1 cup strawberries and blend at high speed until pureed.
  4. Add eggs, yogurt, sugar, salt and food coloring, if desired.
  5. Blend at high speed, adding ice cubes one at a time until ice is crushed.
  6. Pour about 1/2 cup into each of 8 dessert dishes or 8 custard cups. Chill until set, about 15 minutes.
  7. Garnish with fresh strawberries and mint leaves, if desired.
