Strawberry Ribbon Bread

  1. In a large bowl, combine the flour, sugar, baking soda, salt and cinnamon. In another bowl, combine the eggs, oil, strawberries and food coloring if desired. Stir into dry ingredients just until moistened.
  2. For filling, beat cream cheese in a small bowl. Add the egg, sugar, flour and extract; beat well.
  3. Spoon a fourth of the batter into each of two greased 8x4-in. loaf pans. Spread half of the filling over each. Top with the remaining batter.
  4. Bake at 350u0b0 for 70-80 minutes or until a toothpick inserted in the center comes out clean. Cover loosely with foil if top browns to quickly. Cool for 10 minutes before removing from pans to wire racks to cool completely. Store in the refrigerator.
