A.B.C. Vegetable Soup

  1. Heat oil in a saucepan over medium heat.
  2. Add onion and garlic and cook until the onion is soft, about 2 minutes.
  3. Stir occasionally.
  4. Add chicken broth, tomato, pasta and parsley to the saucepan.
  5. Bring liquid to a boil; reduce heat and simmer for 10 minutes.
  6. Add broccoli, carrots and celery to soup; cook 10 minutes.
  7. Add salt and pepper to taste.
  8. Sprinkle with Parmesan cheese if desired.
