A.B.C. Vegetable Soup
- 1 tsp. vegetable oil
- 1/2 c. chopped onion
- 1 clove garlic, chopped
- 2 (14 1/2 oz.) cans chicken broth
- 1 (28 oz.) can crushed tomatoes
- 1/3 c. alphabet pasta
- 1/2 c. parsley
- 1 c. chopped broccoli
- 1 c. chopped carrots
- 1 c. sliced celery
- salt and pepper to taste
- 2 Tbsp. grated Parmesan cheese
- Heat oil in a saucepan over medium heat.
- Add onion and garlic and cook until the onion is soft, about 2 minutes.
- Stir occasionally.
- Add chicken broth, tomato, pasta and parsley to the saucepan.
- Bring liquid to a boil; reduce heat and simmer for 10 minutes.
- Add broccoli, carrots and celery to soup; cook 10 minutes.
- Add salt and pepper to taste.
- Sprinkle with Parmesan cheese if desired.
