Glazed Apple Turnovers
- 2/3 cup sugar
- 1 cup unsweetened apple cider or juice
- 2 tablespoons cider vinegar
- 7 medium apples, peeled and chopped (about 7 cups)
- 3 teaspoons apple pie spice
- 2 teaspoons ground cinnamon
- 2 packages (17.3 ounces each) frozen puff pastry, thawed
- 4 cups confectioners' sugar
- 2 tablespoons butter, softened
- 2 teaspoons vanilla extract
- 1 to 2 teaspoons half-and-half cream
- In a large heavy saucepan, spread sugar; cook, without stirring, over medium-low heat until it begins to melt. Cook until melted sugar turns a medium amber color, stirring occasionally. Mix cider and vinegar; pour slowly into melted sugar (mixture will harden). Reduce heat; cook and stir until mixture returns to a liquid. Add apples and spices; toss to coat. Remove from heat; let stand, covered, until cooled.
- Preheat oven to 400u0b0. Drain apples; reserving juices. On a lightly floured surface, roll each sheet of puff pastry sheet into a 12-in. square. Cut each into four squares. - Bake until golden brown, 18-20 minutes. For glaze, mix confectioners' sugar, butter, vanilla and reserved apple juices. Stir in enough cream to reach a thick drizzling consistency. Spoon over turnovers. Serve warm.
