Homemade Vegetable Soup
- 1 lb. ground chuck
- 1/2 lb. sausage meat or ground turkey
- 1 large onion
- 1 can sliced carrots
- 1 can sliced tomatoes
- 1 can midget butter beans
- 1 can Niblets whole corn
- 1 can LeSueur garden peas
- 1 can cut okra
- 1 can potatoes
- 1 can tomato sauce
- Mix ground chuck and other meat of your choice together.
- Cut large onion into small pieces.
- Boil these ingredients in big boiler; add salt and pepper to season.
- Pour off first water to remove some grease.
- Add water back to boiler.
- Add all other vegetables and tomato sauce.
- Season again with salt, pepper and garlic salt.
- Cook all this together for 1 hour on medium heat. Serves 6; if any leftover, freeze and serve at a later date.
