Orange Muffins With Dates
- 1 orange
- 1/2 cup orange juice
- 1 tablespoon grated orange zest
- 1 large egg
- 1/2 cup vegetable oil
- 1 cup whole wheat flour
- 3/4 cup packed brown sugar
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped dates
- Peel orange, reserving peel, and separate orange into segments. Place peel, segments and juice in a blender or food processor. Add eggs and oil; blend well. In a bowl, combine whole wheat flour, brown sugar, all-purpose flour, baking powder, baking soda and salt. Add orange mixture and stir just until moistened. Fold in dates. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400u0b0 for 14-16 minutes or until muffins test done.
