Nine Bean Soup
- 1 lb. barley pearls
- 1 lb. black beans
- 1 lb. red beans
- 1 lb. pinto beans
- 1 lb. navy beans
- 1 lb. Great Northern beans
- 1 lb. lentils
- 1 lb. split peas
- 1 lb. black-eyed peas
- 2 c. soup mix
- 2 qt. water
- 1 lb. ham, diced
- 1 large onion, chopped
- 1 clove garlic, minced
- 1/2 to 3/4 tsp. salt
- 1/2 tsp. garlic salt
- 1/2 tsp. seasoned pepper
- 1 (16 oz.) can tomatoes, chopped
- 1 (10 oz.) can tomatoes and green chilies
- 1 (16 oz.) pkg. smoked sausage, sliced
- Combine all dry beans; rinse.
- Place in large pot.
- Cover with water 2 inches above beans and soak overnight.
- Drain beans.
- Add 2 quarts water and next 6 ingredients.
- Cover and bring to a boil. Reduce heat and simmer 2 hours or until beans are tender.
- Add remaining ingredients.
- Simmer 1 hour, stirring occasionally.
