Zesty Lasagna
- 1/2 lb. Italian sausage
- 1 lb. ground beef
- 1 clove garlic, minced
- 1 Tbsp. dried basil, crushed
- 1 tsp. oregano
- 2 tsp. salt, divided
- 3/4 tsp. pepper, divided
- 1 onion, chopped
- 3 Tbsp. chopped mushrooms
- 3 c. canned tomatoes
- 2 - 6oz. cans tomato paste
- 10oz. lasagna noodles, cooked & drained
- 3 c. Ricotta cheese
- 1/2 c. Parmesan cheese
- 2 Tbsp. dried parsley flakes
- 2 eggs, beaten
- 8oz. Mozzarella cheese, shredded
- Brown meats together, drain.
- Add garlic, basil, oregano, 1 tsp. salt, 1/4 tsp. pepper, onion, mushrooms, tomatoes & tomato paste.
- Simmer uncovered 30 min. stirring occasionally.
- While noodles are cooking, combine Ricotta, Parmesan, parsley, eggs, remaining salt & pepper.
- Place half of noodles in 13 x 9 x 2-inch baking dish.
- Spread half each of Ricotta filling, mozzarella, then tomato sauce.
- Repeat layers.
- Bake at 375u0b0 for 30 minutes.
- Let stand for 10 - 15 min. before serving.
