Smoked Sausage Supper

  1. Drain pineapple, reserving liquid.
  2. Set aside.
  3. Heat oil and cook sausage, onion, pepper and celery until vegetables are crisp-tender.
  4. Add tomatoes, broth, garlic, brown sugar and pepper; cover and simmer for 5 minutes.
  5. Blend cornstarch and pineapple juice; stir into skillet.
  6. Cook until thick.
  7. Stir in pineapple chunks.
  8. Serve over rice.
  9. Makes 6 servings.
