Smoked Sausage Supper
- 1 (8 oz.) can pineapple chunks
- 1 Tbsp. oil
- 12 oz. fully cooked turkey sausage, skinned and cut in 1/2-inch slices
- 1 large onion, chopped
- 1 green pepper, chopped
- 1 c. sliced celery
- 1 (14 1/2 oz.) can Italian tomatoes
- 1 can beef broth
- 1 garlic clove, minced
- 1 Tbsp. brown sugar
- 1/2 tsp. pepper
- 3 Tbsp. cornstarch
- Drain pineapple, reserving liquid.
- Set aside.
- Heat oil and cook sausage, onion, pepper and celery until vegetables are crisp-tender.
- Add tomatoes, broth, garlic, brown sugar and pepper; cover and simmer for 5 minutes.
- Blend cornstarch and pineapple juice; stir into skillet.
- Cook until thick.
- Stir in pineapple chunks.
- Serve over rice.
- Makes 6 servings.
