Raisin Pumpkin Bars
- 2 cups sugar
- 1 can (15 ounces) solid-pack pumpkin
- 1 cup canola oil
- 4 large eggs, room temperature
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/8 teaspoon ground cloves
- 1/2 cup raisins
- 1/3 cup chopped pecans or walnuts
- 1/3 cup butter, softened
- 3 ounces cream cheese, softened
- 1 tablespoon whole milk
- 1 teaspoon vanilla extract
- 2 cups confectioners' sugar
- In a large bowl, beat the sugar, pumpkin, oil and eggs. Combine the flour, baking powder, baking soda, cinnamon, nutmeg, salt and cloves; gradually add to pumpkin mixture and mix well. Stir in raisins and nuts.
- Pour into a greased 15x10x1-in. baking pan. Bake at 350u0b0 for 25-30 minutes or until a toothpick is inserted in the center comes out clean. Cool on a wire rack.
- For frosting, combine the butter, cream cheese, milk and vanilla in a bowl; beat until smooth. Gradually beat in confectioners' sugar. Spread over top; cut into bars. Store in the refrigerator.
