Clams Casino
- 24 Cherrystone clams in shell
- 6 slices bacon
- 1 medium onion, minced
- 1/2 green pepper, minced
- 2 Tbsp. chopped chives
- 2 Tbsp. grated Parmesan cheese
- 1 tsp. paprika
- 1/4 tsp. ground white pepper
- 2 to 3 dashes seafood seasoning
- dash of monosodium glutamate
- Open shells, letting clams remain in one half.
- In medium frypan, saute bacon until crisp.
- Remove bacon, crumble and reserve.
- Pour off excess fat, add onion and pepper and saute for 5 minutes.
- In small bowl mix chives, cheese, paprika, pepper, seafood seasoning and m.s.g. together.
- Blend into sauteed vegetables.
- Add the reserved bacon.
- Place 1 teaspoon of bacon mixture on each opened clam.
- Place clams on shallow baking pan and bake at 400u0b0 for 10 minutes.
- Serve with melted butter.
- Makes 24.
