Stuffed Green Peppers

  1. Brown ground beef, drain.
  2. Chop onion, set aside.
  3. Prepare minute rice per package directions.
  4. Add onion, tomato paste, and tomato sauce to ground beef.
  5. Simmer and mix over low heat.
  6. Pour ground beef into large bowl and mix with rice.
  7. Add 1/4 can Italian stewed tomatoes and mix together.
  8. If mixture is too dry, add more stewed tomatoes.
  9. Salt and pepper to taste.
  10. Wash and cut 1/4 inch cap off of peppers.
  11. Clean out peppers and save cap.
  12. Fill each pepper with rice mix.
  13. Put peppers in large baking dish, add leftover rice mix.
  14. Pour remaining Italian stewed tomatoes over peppers and rice.
  15. Bake covered at 350u0b0 for 1 hour or until peppers are soft.
