Stuffed Green Peppers
- 1 lb. extra lean ground beef
- 1 medium size onion
- 1 small can tomato paste
- 1 large can Italian stewed tomatoes
- 1 small can tomato sauce
- 2 c. minute rice
- 4 large green peppers
- salt and pepper
- Brown ground beef, drain.
- Chop onion, set aside.
- Prepare minute rice per package directions.
- Add onion, tomato paste, and tomato sauce to ground beef.
- Simmer and mix over low heat.
- Pour ground beef into large bowl and mix with rice.
- Add 1/4 can Italian stewed tomatoes and mix together.
- If mixture is too dry, add more stewed tomatoes.
- Salt and pepper to taste.
- Wash and cut 1/4 inch cap off of peppers.
- Clean out peppers and save cap.
- Fill each pepper with rice mix.
- Put peppers in large baking dish, add leftover rice mix.
- Pour remaining Italian stewed tomatoes over peppers and rice.
- Bake covered at 350u0b0 for 1 hour or until peppers are soft.
