Lighthouse Raspberry Cake
- 2 eggs, separated
- 1/2 c. shortening
- 1 tsp. vanilla
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1 c. sugar
- 1/4 tsp. salt
- 1/3 c. milk
- 1 1/2 c. raspberries
- Grease and flour bottom of square pan.
- Beat egg whites until stiff.
- Add 1/4 cup sugar.
- Set aside.
- Cream shortening, salt, vanilla and remaining 3/4 cup sugar and egg yolks.
- Beat until creamy.
- Combine flour and baking powder in separate bowl.
- Add alternately with milk.
- Fold in egg whites.
- Coat raspberries lightly with flour.
- Add berries to dough.
- (Save 1/3 cup of berries to sprinkle on top.)
- Put in pan.
- Sprinkle top with 1/3 cup of raspberries and sprinkle with sugar.
- Bake at 350u0b0 for 50 minutes.
- Do not underbake.
