Chicken-And-Vegetable Platter
- 1 (16 oz.) pkg. frozen broccoli, cauliflower and carrots
- 1 Tbsp. lemon juice
- 1/2 tsp. salt, divided
- 1/4 tsp. pepper, divided
- 1/2 tsp. dried whole basil, divided
- 4 chicken breast halves, skinned and boned
- 1/4 c. chopped green onions
- 1 (0.9 oz.) pkg. Hollandaise Sauce mix
- Arrange frozen vegetables on a microwave-safe round 12-inch platter.
- Cover tightly with heavy-duty plastic wrap.
- Vent and microwave at High 4 minutes.
- Sprinkle lemon juice, 1/4 teaspoon salt, 1/8 teaspoon pepper and 1/4 teaspoon basil over vegetables, stirring gently.
- Push vegetables to center, leaving a 3-inch border.
- Sprinkle chicken with remaining salt, pepper and basil; arrange chicken around vegetables with thickest portion to outside.
- Sprinkle with green onions.
- Cover tightly with heavy-duty plastic wrap; microwave at High 8 to 9 minutes, or until chicken is tender, giving platter a half turn after 4 minutes.
- Let stand 3 minutes.
- Drain liquid from platter.
