Minestrone Soup
- 1/2 c. uncooked navy beans or mixed beans
- 1 (10 3/4 oz.) can chicken broth
- 1 qt. water
- 2 medium carrots, cut
- 1/2 small head cabbage, shredded
- 1 medium potato, diced
- 1 (16 oz.) can unsalted tomatoes
- 1 medium onion, diced
- 1 stalk celery, chopped
- 1 zucchini, chopped
- 2 cloves garlic, minced
- 1/2 c. broken spaghetti
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/4 tsp. marjoram
- 2 Tbsp. parsley
- In large kettle cover beans with water.
- Boil.
- Turn off stove; let sit 1 hour.
- Drain water; add 1 quart water and chicken broth.
- Cook for 1/2 hour.
- Add remaining vegetables and spices and cook 1/2 hour.
- Add spaghetti 10 minutes before serving.
- Add tomato juice, if needed, for moisture.
