Tex-Mex Turkey Enchiladas
- 1 1/2 cups turkey, cooked and shredded or chopped
- 1/4 cup picante sauce
- 1 (3 oz) pkg cream cheese, cubed
- 1/2 cup sliced green onions
- 3/4 tsp ground cumin
- 1/4 tsp crushed oregano
- 1/2 cup shredded Monterey Jack or Colby cheese
- 8 flour tortillas
- 3/4 cup picante sauce
- 1 cup cheese
- Place first 6 ingredients over low heat until cheese is melted, stirring occasionally.
- Stir in 1/2 cup Monterey cheese.
- Spoon a scant 1/3 cup turkey mixture down the center of each of 8 flour tortillas; roll and place seam side down in a lilghtly greased 12x7-inch baking dish.
- Spoon 3/4 cup picante sauce evenly over the enchiladas; cover with 1 cup cheese.
- Bake in 350u0b0 oven for 15 minutes.
- Serves 4.
