Baja-Derves

  1. In a large bowl, combine cheese, chili peppers, olives, onion and mayonnaise or salad dressing.
  2. Gently fold in shrimp.
  3. Arrange about 20 tortilla chips on a 12-inch microwave-safe platter.
  4. Top each chip with a rounded teaspoonful of the cheese mixture. Microcook, uncovered, on 100% power (High) for 1 to 2 minutes (low wattage: place 12 chips on a paper plate and cook 1 to 2 minutes) or until cheese is melted, giving plate a half turn after 1 minute.
  5. Repeat with remaining chips and cheese mixtures.
  6. Makes 36 to 40 appetizer chips; 12 appetizer servings.
