Manchupa(Samp & Beans)

  1. Rinse out samp.
  2. Place samp in a 12 quart pot half filled with water and bay leaf.
  3. Bring to a boil.
  4. Turn down and let simmer for 1 hour.
  5. Add kale, linguicia, short ribs, and salt.
  6. Saute onions in oil.
  7. Add paprika and black pepper to onions.
  8. Add onion mixture to pot; add enough water to cover the vegetables.
  9. Bring pot up to a boil; lower heat and allow pot to simmer for at least 3 1/2 -4 hours.
  10. During the last 1/2 hour of cooking add cans of butter beans (Juice and all).
