Special Cranberry Nut Muffins
- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cardamom
- 1 teaspoon ground cloves
- 1 cup buttermilk
- 1 egg
- 1/2 cup butter, melted
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts
- 1/2 cup butter, softened
- 1/4 cup confectioners' sugar
- 1 teaspoon ground cardamom
- In a bowl, combine the dry ingredients. Stir in the buttermilk, egg, butter, cranberries and nuts just until moistened. Fill greased or paper-lined muffin cups three-fourths full.
- Bake at 400u0b0 for 20-25 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing to wire racks. Combine cardamom butter ingredients; serve with muffins.
