Italian Meat Loaf

  1. Combine ground beef, eggs, cracker crumbs, onion and spices. Mix well and shape into flat rectangle (about 10 x 12-inch) on wax paper.
  2. Sprinkle 1/4 cup of cheese onto meat mixture.
  3. Roll up like jelly roll and pinch ends to seal.
  4. Place in covered dish. Bake at 350u0b0 for 1 hour; drain grease.
  5. Pour tomato sauces and remaining cheese over top and bake an additional 15 minutes until lightly browned.
  6. Slice and serve, spooning sauce over slices.
