Italian Meat Loaf
- 2 lb. ground beef
- 1 egg
- 3/4 c. cracker crumbs
- 1/2 c. chopped onion
- 1/8 tsp. pepper
- 1 (16 oz.) can Hunt's Italian tomato sauce
- 1 (8 oz.) can plain tomato sauce
- 1/2 tsp. salt
- dash of oregano
- 1 tsp. Italian seasoning
- 2 to 3 c. shredded Mozzarella cheese
- Combine ground beef, eggs, cracker crumbs, onion and spices. Mix well and shape into flat rectangle (about 10 x 12-inch) on wax paper.
- Sprinkle 1/4 cup of cheese onto meat mixture.
- Roll up like jelly roll and pinch ends to seal.
- Place in covered dish. Bake at 350u0b0 for 1 hour; drain grease.
- Pour tomato sauces and remaining cheese over top and bake an additional 15 minutes until lightly browned.
- Slice and serve, spooning sauce over slices.
