Wholesome Quick Bread
- 2 cups whole wheat flour
- 3/4 cup sugar
- 1/4 cup quick-cooking oats
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3/4 cup buttermilk
- 1/2 cup egg substitute
- 1/3 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas
- 1/3 cup chopped pecans
- 2 tablespoons brown sugar
- 2 tablespoons quick-cooking oats
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- In a large bowl, combine the flour, sugar, oats, baking powder, baking soda, cinnamon and nutmeg. In a small bowl, whisk the buttermilk, egg substitute, applesauce and vanilla. Stir into dry ingredients just until moistened. Fold in bananas. Transfer to two 8x4-in. loaf pans that have been coated with cooking spray.
- Combine topping ingredients; sprinkle over top. Bake at 350u0b0 for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes before removing to a wire rack to cool completely.
