Easy Spinach Lasagna
- 9 to 10 lasagna noodles (uncooked)
- 1 to 1 1/2 lb. Ricotta cheese
- 1 pkg. frozen spinach, defrost and chop
- 1 jar spaghetti sauce plus 1 c. water
- 8 oz. chopped tomatoes (fresh or canned)
- 8 oz. Mozzarella
- 4 oz. Cheddar cheese
- garlic, basil and parsley
- Mix tomatoes, sauce and water and place a small amount in bottom of 9 x 12-inch deep foil baking pan.
- Layer 3 dry noodles. Mix Ricotta and spinach and layer with noodles and sauce.
- Add some Cheddar along with garlic and basil.
- Pour remaining sauce on top and Mozzarella last with parsley and any remaining Cheddar. Cover with foil.
- This can all be done ahead of time.
- Bake at 350u0b0 for 1 1/2 hours.
- Remove foil last 30 minutes.
- Let sit 30 minutes before serving.
