Red Beans And Rice

  1. Rinse and drain beans.
  2. In a large pot with a lid, place beans and cover with water.
  3. Add ham bone and bring to a boil.
  4. Reduce heat and simmer 40 minutes.
  5. Add sausage, cover and cook for 1 hour, stirring occasionally.
  6. Add garlic, onions, celery, green pepper and bay leaf.
  7. Continue cooking, covered, 1 1/2 hours, or until soft.
  8. Add Worcestershire sauce, Tabasco sauce, parsley and salt.
  9. Simmer 5 minutes.
  10. Remove bay leaf; serve over rice.
