Orange-Date-Nut Bread
- 6 oz. dates, chopped
- 1/2 c. boiling water
- 1 tsp. margarine
- 1 egg
- 1/4 c. sugar
- 1/2 c. orange juice concentrate, thawed
- 1 1/2 c. flour
- 1/4 tsp. salt (optional)
- 1 tsp. baking soda
- 2 1/2 oz. walnuts, chopped
- Pour boiling water over the chopped dates.
- Stir until lukewarm.
- Beat in by hand margarine, egg, sugar and orange juice concentrate.
- Sift together dry ingredients, except nuts.
- Fold dry ingredients into date mixture.
- Add chopped nuts and blend thoroughly.
- Pour into 9 x 5-inch loaf pan sprayed with Pam and bake in a 350u0b0 oven for 45 to 55 minutes, or until toothpick inserted in center comes out clean.
- Cool in pan 5 minutes.
- Better if eaten immediately or frozen for later use.
- Yields 12 servings.
