Banana Burritos

  1. Peel and cut bananas in half lengthwise.
  2. Brush with lime juice.
  3. Set aside.
  4. In dry medium skillet, soften tortillas one at a time over medium heat, by turning over 2 to 3 times until warm and limp.
  5. Keep warm.
  6. Spread 1 tablespoon apricot preserves over each tortilla.
  7. Place a banana half across lower third of tortilla.
  8. Sprinkle with cinnamon; roll up.
  9. Lay seam side down on plate.
  10. In heavy skillet, heat oil and butter over medium heat. Put tortillas in hot oil.
  11. Brown lightly.
  12. Serve with dollop of whipped cream and nuts or berries.
  13. Serves 4.
