Celebration Chicken Buns
- 1 Tbsp. Crisco oil
- 1/3 c. finely chopped green pepper
- 1/3 c. finely chopped celery
- 1/3 c. finely chopped onion
- 1 clove garlic, minced
- 1/2 c. ketchup
- 2 Tbsp. Worcestershire sauce
- 2 Tbsp. cider vinegar
- 1 Tbsp. brown sugar
- 1/2 tsp. salt
- 1/4 tsp. chili powder
- 1/4 tsp. pepper
- 2 (5 oz. each) cans chicken (in water), drained (1 1/2 c.)
- 8 hamburger buns
- Heat oil in a large skillet on medium heat. Add green pepper, celery, onion and garlic.
- Saute until crisp-tender. Add ketchup, Worcestershire sauce, vinegar, brown sugar, salt, chili powder and pepper.
- Mix well.
- Heat to a boil. Reduce heat. Stir in chicken. Simmer 10 minutes, stirring occasionally.
- Spoon 1/4 cup chicken mixture over bottom half of each bun. Replace top.
- Makes 8 servings.
