Chock-Full Of Fruit Snackin’ Cake
- 2 cups all-purpose flour
- 2 cups quick-cooking oats
- Sugar substitute equivalent to 1-1/2 cups sugar
- 2-3/4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 3 large eggs
- 1 cup orange juice
- 1/3 cup canola oil
- 2 large carrots, shredded
- 2 medium apple, peeled and shredded
- 1 cup raisins
- 1 cup dried cranberries
- 1 cup chopped walnuts
- In a large bowl, combine the first six ingredients. Whisk the eggs, orange juice and oil; stir into dry ingredients just until moistened. Fold in the remaining ingredients.
- Pour into a 13x9-in. baking dish coated with cooking spray. Bake at 350u0b0 for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into squares.
