Beef And Broccoli

  1. Slice beef into bite-sized strips.
  2. Cook broccoli and carrots in boiling salted water, covered, for 2 minutes.
  3. Mix cornstarch, salt, sugar, soy sauce and sherry.
  4. Set aside.
  5. Stir-fry broccoli, carrots and onions in hot oil for 2 minutes.
  6. Remove from wok. Add 1/2 the beef to wok; fry for 2 minutes.
  7. Remove beef; stir-fry remaining beef.
  8. Return all beef to wok.
  9. Add peas, water chestnuts and bamboo shoots.
  10. Add soy mixture to wok.
  11. Cook and stir until thickened and bubbly.
  12. Return broccoli, carrots and onion to wok; cover and cook 1 minute.
  13. Serve over hot cooked rice.
