Chicken Cabbage Rotel
- 3 lb. boneless skinless chicken
- 3 cans Ro-Tel
- 1 packet taco seasoning
- 2 bunches green onions
- 1 head cabbage
- salt and pepper to taste
- 1 (16 oz.) sour cream
- large bag Mozzarella and Cheddar cheese each
- Cub cabbage into small pieces and put in large pot.
- Add salt and pepper to taste and cook until tender.toil or grill chicken. Cut into pieces and place in skillet.
- Chop green onions and add to chicken.
- Then add all three cans of Ro-Tel (juice included). Also, add the 1 pack of taco seasoning.
- Turn on low and simmer until cabbage is done.
- Drain cabbage and return to the pot.
- Pour chicken mixture on top of cabbage and mix well.
- Then pour into a 9 x 13 pan.
- Top with sour cream and then add cheese.
- Bake at 375u0b0 until cheese is melted to golden brown.
