Hawaiian Chicken
- 1/4 c. brown sugar
- 2 Tbsp. cornstarch
- 1/2 tsp. salt
- 1 c. liquid from canned pineapple chunks
- 1/4 c. vinegar
- 1 Tbsp. soy sauce
- 3 c. cooked sliced chicken
- 1/4 c. thinly sliced onion
- 1 c. drained pineapple chunks
- 1/2 c. very thinly sliced celery strips
- 2 Tbsp. diced pimento (optional)
- 2 c. cooked rice
- chow mein noodles
- Combine
- the first 3 ingredients; stirtnto
- pineapple liquid in pot over medium heat.
- Add vinegar
- andtoy
- sauce. Bring
- to boil, reduce heat and cooktntil
- thick,
- stirring constantly. Remove from heat.
- Add chicken andthe
- rest
- of the ingredients. Cook for 5 minutes.
- Serve on a
- bed of rice garnished with the noodles.
- Makes 8 servings.
