Chaiwalla'S Famous Tomato Pie
- 2 c. flour
- 4 tsp. baking powder
- 1 tsp. salt
- 1/4 c. butter
- about 2/3 c. milk
- ripe tomatoes, peeled and sliced
- 1 1/2 c. grated sharp Cheddar
- 1/3 c. mayonnaise
- 2 Tbsp. torn basil leaves
- 1 Tbsp. chopped chives
- Preheat oven to 400u0b0.
- To make biscuit dough, place flour, salt and baking powder in bowl and cut in butter until mixture becomes coarse.
- Add enough milk to make dough medium soft.
- Place about half of dough onto floured board and roll to fit 9-inch pie pan. Cover dough with tomato slices; sprinkle chives and basil over tomatoes.
- Top with half of the cheese and coat with mayonnaise. Add remaining cheese.
- Roll remaining dough thinly to fit over top of the pie and pinch cloves.
- Bake until brown on top, about 20 minutes.
- Makes six servings.
