Reuben Croquettes

  1. Cook rice with 1 1/3 cups of water, 1/2 teaspoon of salt and oleo.
  2. Drain kraut as well as possible.
  3. Chop kraut and corned beef very fine.
  4. Add onion, 2 eggs, rice, cheese, 1 teaspoon of salt and pepper.
  5. Mix well.
  6. Shape into 18 balls.
  7. Combine 1 egg and 2 teaspoons of water; beat slightly.
  8. Roll each ball in egg wash and roll in crumbs again.
  9. Cook in hot, shallow oil for 5 to 7 minutes.
  10. Turn once.
