Spicy Mexican Pie
- 1 lb. spicy ground sausage
- 1 c. chopped onion
- 2 cloves chopped garlic
- 4 oz. drained chopped chilies
- 8 (10-inch) flour tortillas
- 2 c. shredded Monterey Jack or hot pepper cheese
- 16 oz. can refried beans
- 7 oz. jar red peppers, drained
- Cook sausage, onion and garlic in skillet until done.
- Drain grease.
- Stir in green chilies; set aside. Grease 10-inch pie dish.
- Place 2 tortillas on the bottom. Spread 1/2 sausage mixture. Sprinkle with 1/2 the cheese. Add 2 tortillas. Spread with beans. Add 2 tortillas.
- Spread with peppers. Add 2 tortillas. Spread with remaining sausage and cheese on top. Cover and bake 40 minutes.
- Uncover and bake 15 minutes until hot in center.
- Cool 10 minutes. Cut.
- Serve with salsa or sour cream.
