Red Beans And Rice(Serves Six)

  1. Rinse kidney beans twice.
  2. Discard any that look bad.
  3. Put beans in a big, heavy pot, at least 3-quart size (4-quart is better).
  4. Add water, ham and sausage.
  5. Set uncovered on a burner at medium heat.
  6. While the beans are soaking and warming, chop and add scallions, green pepper, celery and onions.
  7. Add thyme and bay leaves.
  8. When the mixture boils, reduce heat and cover.
  9. Stir every 20 to 30 minutes for 3 hours.
