Sunny'S Baked Beans
- 2 lb. dry beans (Jacob's Cattle or Yelloweye)
- 1 tsp. dry mustard
- 4 Tbsp. molasses
- 2 c. sugar
- 1 large onion
- 1/4 lb. salt pork
- Soak beans overnight in hot water.
- Next morning, rinse and cover with hot water and parboil until blowing on a bean, the skin peels or tenderish to squeeze.
- I put a dab of butter in to help keep them from foaming over while parboiling.
- Last 5 minutes, put in 1/2 teaspoon baking soda and finish the parboil.
- Drain and rinse well.
- In bean pot or large casserole, put half the beans. Cover with water.
- Add sugar, dry mustard, molasses, onion and salt pork.
- Then add the rest of the beans.
- Bake in slow oven, 250u0b0 to 300u0b0, for 4 to 5 hours, covered.
- Last half hour, uncover to brown.
- Stir occasionally during cooking.
- Add more water as needed.
