Gram'S White Chili
- 1 lb. Great Northern beans, soaked overnight
- 6 c. chicken broth
- 2 cloves minced garlic
- 2 medium onions, chopped
- 1 Tbsp. oil
- 1 (4 oz.) can green chilies
- 1 tsp. ground cumin
- 1/4 tsp. ground cloves
- 1/2 tsp. cayenne pepper
- 4 c. cooked and diced chicken breasts
- 3 c. grated Monterey Jack cheese
- Combine beans (drained), chicken broth, 1/2 of the onions and garlic in large pot and bring to a boil.
- Simmer until beans are very soft.
- Add more broth if necessary. Saute remaining onions in oil until tender. Add chilies and seasonings; mix thoroughly. Add to bean mixture. Add chicken and simmer 1 hour.
- Serve with cheese and cornbread or chips.
