Diabetic Apple Cherry Crunch

  1. Preheat oven to 350u0b0.
  2. Place chopped apples in medium bowl. Drain cherries, saving juice.
  3. Add cherries to apples; set aside. In small saucepan, combine cherry juice, concentrate and 1/4 cup fructose. Stir over medium heat until thickened.
  4. Remove from heat.
  5. Add almond flavoring.
  6. Pour over fruit.
  7. Pour entire fruit mixture into a round 2-quart casserole dish which has been sprayed with nonstick vegetable spray.
  8. Combine flour, oats, cinnamon, margarine, 1/4 cup apple juice concentrate and 2 tablespoons fructose, mixing to a crumb-like consistency.
  9. Crumble over fruit mixture.
  10. Bake at 350u0b0 for 25 minutes or until browned.
  11. Yields 16 servings.
  12. Each serving contains 141 calories (27% from fat).
