Old-Fashioned Apple Cake
- 1 cup butter, softened
- 2 cups sugar
- 3 eggs
- 1/2 cup water
- 1 tablespoon vanilla extract
- 1/4 teaspoon almond extract
- 2-1/2 cups all-purpose flour
- 2 tablespoons baking cocoa
- 1 teaspoon baking powder
- 3/4 teaspoon ground cardamom
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 medium tart apples, peeled and shredded
- 1 cup chopped walnuts
- 1/2 cup semisweet chocolate chips
- 1/2 cup sugar
- 1/4 teaspoon ground cardamom
- In a bowl, cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each. Beat in water and extracts. Combine dry ingredients; add to creamed mixture. stir in apples, walnuts and chips. Pour into a greased and floured 10-in. fluted tube pan. Bake at 325u0b0 for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes; remove to a wire rack. Combine sugar and cardamom in a blender; process for 1 minute. Sprinkle 3-5 tablespoons over cooled cake. Store remaining sugar in an airtight container for another use.
