Caramel Popcorn
- 1 c. unpopped popcorn
- 1 c. butter or oleo
- 2 c. light brown sugar, firmly packed
- 1/2 c. light corn syrup
- 1 tsp. salt
- 1 tsp. vanilla
- 1/2 tsp. baking soda
- Pop popcorn in air popper.
- Yields 5 to 6 quarts popped corn. Place
- in large bowl.
- Combine butter, sugar, syrup and salt in heavy saucepan.
- Heat and stir over medium heat until boiling. Then
- boil
- without
- stirring for 5 minutes.
- Remove from heat. Stir
- in
- vanilla and soda.
- Pour over popcorn and toss well until
- all
- pieces
- are
- coated.
- Spread on 2 large ungreased shallow
- pans.
- Bake
- in 250u0b0 oven for 1 hour, stirring every
- 15 minutes.
- Cool
- completely.
- Break
- apart
- and store in airtight containers.
