Taco Hamburger Casserole
- 1 lb. ground chuck beef
- 1 Tbsp. butter
- 1 medium onion, chopped
- 4 drops Tabasco sauce
- 1 (8 oz.) can tomato sauce
- 1 pkg. taco seasoning mix
- 2 eggs, beaten
- 1 c. half and half milk
- 1 (6 oz.) pkg. corn chips
- 8 oz. shredded Mozzarella cheese
- 1 c. sour cream
- 1/2 c. shredded Cheddar cheese
- Crumble beef into ovenware dish.
- Cook in microwave 5 to 6 minutes or until meat is no longer pink.
- Stir after 3 minutes. Set aside.
- Place butter in a 1-quart measuring cup.
- Cook until melted.
- Add onions.
- Cook until onions are transparent.
- Add Tabasco sauce, tomato sauce, taco seasoning and water.
- Stir. Combine eggs and half and half.
- Add this slowly to tomato sauce, stirring constantly.
- Place half of the corn chips in casserole dish.
- Top with half of beef, half of Mozzarella and half of sauce.
- Repeat layers.
- Cook 15 minutes.
- Top with sour cream and shredded cheese.
- Cover.
- Cook 1 to 3 minutes.
