Caramel-Nut Apples(Caramel Apples Are Rolled In Crunchy Walnuts)

  1. Advance preparation:
  2. In saucepan, combine brown sugar, light corn syrup and butter or margarine.
  3. Bring mixture to boiling over medium heat, stirring constantly.
  4. Stir in sweetened condensed milk.
  5. Simmer, stirring constantly, until soft-ball stage (234u0b0 to 240u0b0 on candy thermometer).
  6. Stir in vanilla; remove from heat. Insert a wooden stick into blossom end of each apple.
  7. Dip apple in caramel mixture, turning until apple is completely coated. Immediately roll bottom half of coated apple in chopped walnuts. Repeat with remaining apples.
  8. Place on baking sheet covered with waxed paper.
  9. Chill until caramel is firm.
  10. Makes 6.
