Cola Cake With Strawberries & Cream

  1. Preheat oven to 350u0b0. Grease a 13x9-in. baking dish. In a large bowl, whisk flour, sugar and baking soda. In a large saucepan, bring cola to a boil; cook until liquid is reduced to 1 cup, 7-9 minutes. Stir in butter, oil and cocoa; return to a boil, stirring occasionally. Remove from heat; stir in marshmallows until melted. Add to flour mixture, stirring just until moistened.
  2. In a small bowl, whisk eggs, buttermilk and vanilla until blended; add to flour mixture, whisking constantly. Transfer to prepared dish. Bake until a toothpick inserted in center comes out clean, 30-35 minutes. Cool completely in baking dish on a wire rack.
  3. For topping, in a small bowl, mix sour cream, brown sugar and vanilla until smooth. Serve cake with topping and strawberries.
