Waldorf Astoria Red Chocolate Cake(Red Velvet Cake)
- 1/2 c. butter (no substitute)
- 2 eggs
- 1 tsp. vanilla
- 2 heaping tsp. cocoa
- 2 1/2 c. cake flour
- 1 Tbsp. vinegar
- 1 1/2 c. sugar
- 3 (1/2 oz. size) bottles red food coloring
- 1 c. buttermilk
- 1 tsp. salt
- 1 tsp. soda
- Cream the butter, sugar and vanilla. Add eggs, one at a time. Mix well. Make a thin paste of the cocoa and food coloring. Add to creamed mixture. Sift flour and salt together. Add flour mixture and buttermilk to creamed mixture, one tablespoon at a time, beginning and ending with flour.
- Mix soda and vinegar. Blend into mixture last.
- Grease and flour three 8-inch pans.
- Bake in preheated oven at 350u0b0 for 20 to 30 minutes. Remove and cool.
