Cranberry-Sauerkraut Meatballs
- 2 lb. ground beef
- 2 eggs
- 1 envelope (1 oz.) dry onion soup mix
- 1/2 c. water
- 1 c. finely crushed soda crackers
- 1 can (16 oz.) sauerkraut, rinsed, drained and snipped
- 1 can (8 oz.) cranberry sauce, whole or strained
- 1/2 c. ketchup
- 1/4 c. chili sauce
- 2 c. water
- 1/2 c. packed brown sugar
- hot cooked noodles or rice
- Mix together ground beef, eggs, onion soup mix, water and crackers.
- Form into balls 1 1/2 inches in diameter, then brown in skillet.
- To make sauce, combine remaining ingredients in bowl. Lightly grease 13 x 9-inch pan.
- Spread half of sauce over bottom. Top with meatballs, then remaining sauce.
- Cover and bake at 325u0b0 for 1 hour.
- Uncover and bake 30 to 40 minutes longer.
- Serve over noodles or rice.
- Makes about 3 dozen, about 8 to 10 servings.
