Southern Pecan Log
- 2 c. white sugar
- 1 c. light brown sugar
- 1 c. light cream
- 1/4 c. corn syrup
- 2 Tbsp. margarine
- 3/4 c. confectioners sugar
- 1 c. finely chopped pecans
- In medium-heavy saucepan, combine white sugar, brown sugar, cream and syrup; mix well.
- Cook, but do not stir, to 240u0b0 on candy thermometer or until small amount dropped in cold water forms a firm ball.
- Remove from heat.
- Add butter but do not stir. Cool to 150u0b0.
- Beat with electric mixer until very thick and light colored.
- Stir in 1/2 cup confectioners sugar. Knead in additional sugar until mixture is very stiff.
- Divide and roll into four 1 1/2 x 6-inch logs.
- Brush with corn syrup.
- Roll in nuts.
- Wrap in wax paper.
- Chill; slice.
- Store in refrigerator.
