Southern Pecan Log

  1. In medium-heavy saucepan, combine white sugar, brown sugar, cream and syrup; mix well.
  2. Cook, but do not stir, to 240u0b0 on candy thermometer or until small amount dropped in cold water forms a firm ball.
  3. Remove from heat.
  4. Add butter but do not stir. Cool to 150u0b0.
  5. Beat with electric mixer until very thick and light colored.
  6. Stir in 1/2 cup confectioners sugar. Knead in additional sugar until mixture is very stiff.
  7. Divide and roll into four 1 1/2 x 6-inch logs.
  8. Brush with corn syrup.
  9. Roll in nuts.
  10. Wrap in wax paper.
  11. Chill; slice.
  12. Store in refrigerator.
