Rocky Road Nut Cake
- 1 3/4 c. sugar
- 1 1/2 c. flour
- 1/2 tsp. salt
- 4 eggs
- 1 tsp. vanilla
- 1 1/2 c. walnuts, chopped
- 1 c. oleo, melted
- 4 c. miniature marshmallows
- 1 c. brown sugar, packed
- 1/2 c. oleo
- 1/3 c. milk
- 1/2 tsp. salt
- 1 c. sifted powdered sugar
- Sift together sugar, flour and 1/2 teaspoon salt.
- Add eggs and vanilla.
- Mix until well blended.
- Stir in nuts and 1 cup oleo. Pour into a greased and floured 9 x 13-inch baking pan.
- Bake at 350u0b0 for 35 to 40 minutes.
- Sprinkle with marshmallows.
- Combine brown sugar, 1/2 cup oleo, milk and 1/2 teaspoon salt in a saucepan.
- Boil 3 minutes.
- Add powdered sugar.
- Mix until smooth. Drizzle over marshmallows.
