Pineapple Pound Cake
- 1 c. butter or margarine, softened
- 2 c. sugar
- 3 eggs
- 3 c. flour
- 1/3 c. powdered milk
- 2 tsp. baking powder
- 1/4 tsp. salt
- 3/4 c. pineapple juice
- 1/2 tsp. vanilla
- 1 c. flaked coconut
- 1/4 c. lemon juice
- Preheat oven to 350u0b0.
- Cream together butter and sugar.
- Add eggs one at a time, beating well each time.
- Sift flour with powdered milk, baking powder and salt.
- In a separate bowl, combine pineapple juice, lemon juice and vanilla extract.
- Add flour mixture alternately with juice mixture to creamed butter and sugar, beating well with each addition.
- Add coconut, stirring well.
- Pour into greased and floured 10-inch tube pan.
- Bake at 350u0b0 for 50 to 55 minutes.
